Good leaves are generous, but they don't hold anything back. Left in hot water for minutes, the same compounds that carry flavor keep extracting past their welcome, and bitterness takes over. Flash steeping keeps you in control: you taste, you adjust, and the leaf lasts through an entire afternoon. A five-gram dose that would make one pot the Western way makes over a liter of tea brewed gongfu style.
On every tea's page you'll find the brewing panel: temperature, leaf dose, and the steep row. The dashed pill marks the rinse (poured off, not drunk), the numbered pills are your infusions in order, and the note at the end tells you how to keep going — most of our teas will give you eight steeps or more before they're done.
